

This Garlic Butter Broiled Lobster Tail features juicy, tender lobster meat with a golden, slightly charred top. Broiling at high heat cooks an 8 oz tail perfectly in less than 10 minutes.

2 cold-water lobster tails (approx. 8 oz each)

3 tbsp unsalted butter, melted

2 cloves garlic, minced

1/2 tsp fresh lemon juice (plus extra wedges for serving)

Step-by-Step Instructions

Prep the Oven: Set your oven to Broil on the high setting (around 500°F/260°C). Position your top oven rack about 5 to 6 inches below the broiler element. Line a baking sheet with aluminum foil or parchment paper.

Butterfly the Tails: Place a lobster tail on your cutting board, hard shell facing up. Use sharp kitchen shears to cut straight down the center of the top shell, stopping right before you reach the tail fin. Do not cut through the bottom shell.

Lift the Meat: Gently pry the shell apart with your fingers to separate the meat from the side walls. Lift the lobster meat up and out of the shell, keeping the back end attached near the fin. Push the empty shell halves back together and lay the lobster meat directly on top of the closed shell (this is called "piggybacking").

Clean and Score: Gently rinse away any dark veins running through the meat. Make a shallow slit down the center of the meat; this helps it cook evenly and prevents curling. Place the prepared tails on your lined baking sheet.

Make the Basting Sauce: In a small bowl, whisk together the melted butter, minced garlic, lemon juice, paprika, and kosher salt.

Season the Lobster: Brush the garlic butter mixture generously all over the exposed lobster meat.

Broil: Place the baking sheet under the broiler. Broil the 8 oz tails for 8 to 10 minutes. The lobster is done when the meat turns completely opaque white and the top gets lightly golden brown. If using a digital thermometer, the internal temperature should hit 140°F (60°C).
