

This Lemon Herb Baked Salmon is incredibly juicy, flavorful, and takes less than 30 minutes to make. Baking a whole side of salmon in foil locks in moisture so the fish never dries out.
Ingredients

1 whole salmon side (approx. 2 to 3 lbs), skin on

3 tbsp olive oil (or melted unsalted butter)

4 cloves garlic, minced

1 large lemon, thinly sliced

2 tbsp fresh lemon juice

1 tbsp fresh dill, finely chopped

1 tsp kosher salt

1/2 tsp black pepper
Step-by-Step Instructions

Prep the Oven and Sheet: Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with a large piece of aluminum foil, making sure it is wide enough to fold over the fish later.

Season the Salmon: Pat the salmon side dry with paper towels. Place it skin-side down on the foil. Rub the olive oil and minced garlic evenly over the top of the flesh.

Add Herbs and Lemon: Season the entire surface evenly with the kosher salt, black pepper, and fresh dill. Pour the lemon juice over the top, then lay the fresh lemon slices in a row down the center of the fish.

Seal the Foil: Fold the sides of the aluminum foil up and over the salmon until it is completely enclosed to create a loose packet. This traps the steam to keep it moist.

Bake: Place the baking sheet in the oven. Bake for 12 to 15 minutes, depending on the thickness of your fish.

Broil (Optional): Open the foil packet carefully to expose the top of the fish. Turn your oven to broil and cook for an extra 2 to 3 minutes until the edges get slightly golden.

Serve: The salmon is perfectly cooked when it flakes easily with a fork in the thickest part. Cut into individual portions and serve immediately.
