This Authentic Louisiana Seafood Gumbo features a deeply flavorful dark roux, the traditional "Holy Trinity" of vegetables, and a rich medley of fresh shrimp and crab meat.  Making a proper gumbo requires prepping all your ingredients beforehand—a step Louisianans call mise en place—because once the roux starts cooking, it requires your undivided attention

Ingredients

  • 1 lb medium shrimp, peeled and deveined (save shells for stock)

  • 1 lb lump crab meat

  • 1/2 lb Andouille sausage, sliced into rounds

  • 1/2 cup vegetable oil (or lard/bacon fat)

  • 1/2 cup all-purpose flour

  • 1 large yellow onion, diced

  • 1 green bell pepper, diced

  • 2 stalks celery, diced

  • 4 cloves garlic, minced

  • 6 cups seafood stock (warmed)

  • 2 cups okra, sliced

  • 2 tbsp Creole or Cajun seasoning

  • 2 bay leaves

  • Steamed white rice, for serving 

 

Step-by-Step Instructions

  1. Prep and Clean (The Chop): Chop your onion, bell pepper, and celery (the Holy Trinity) and place them in a bowl. Mince the garlic, slice the sausage, and measure out your flour and oil. Having these ready ensures your roux won't burn while you try to chop later. 

  2. Brown the Sausage: In a large, heavy-bottomed Dutch oven, heat 1 tablespoon of oil over medium heat. Brown the Andouille sausage slices for 3–4 minutes until crisp, then remove with a slotted spoon and set aside. Leave the rendered fat in the pot. 

  3. Build the Dark Roux: Add the remaining vegetable oil and all the flour to the pot. Whisk continuously over medium-low heat. Do not stop stirring. After 20–25 minutes, the mixture will transition from a light paste to a rich, dark chocolate color.

  4. Sauté the Trinity: Quickly stir your chopped onion, bell pepper, and celery into the hot roux. The temperature of the vegetables will stop the roux from cooking further. Sauté for 5 minutes until soft, then stir in the minced garlic for 30 seconds. 

  5. Simmer the Base: Slowly pour in the warmed seafood stock a little at a time, whisking vigorously to prevent lumps. Add the Creole seasoning, bay leaves, browned sausage, and sliced okra. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes to let the flavors marry. 

  6. Add the Seafood: Turn the heat up to a gentle medium boil. Gently fold in the raw shrimp and lump crab meat. Simmer uncovered for 5 to 7 minutes just until the shrimp turn pink and opaque. Turn off the heat. 

  7. Serve: Discard the bay leaves. Ladle the hot, rich gumbo into bowls over a generous scoop of steamed white rice.
